Healthy Lasagna
Ingredients
2 lbs ground meat (used 1lb ground beef + 1lb ground chicken sausage)
1 pack (9 oz.) Jovial Pasta (gluten free)
16 oz. cottage cheese (used Good Culture)
2 cups mozzarella
½ onion, diced
1 zucchini, diced
12 oz. canned tomatoes, diced
8-10 oz. canned tomato sauce
1 jar (25 oz.) tomato basil marinera sauce (only used about half)
½ tsp garlic powder
1-2 tbsp fresh parsley, diced (can use dried)
1 tsp dried basil
S + P to taste
Preparation
Preheat oven to 375 F.
Cook the chopped onion + ground meat in a skillet until meat is fully cooked.
While meat is cooking, dice up zucchini into cubes. Set meat aside when it’s done and in the same pan add in the zucchini and cook for about 5-8 min, or until cooked (cook time will vary depending on how big the cubes are cut).
Add in the tomatoes, tomato sauce, and spices. Simmer for 10-15 min, stirring often.
Add in the meat + onions into the sauce/zucchini mixture and stir around to coat evenly.
Layer the bottom of a 9x13 baking dish with the lasagna noodles. Add in the meat sauce mixture on top of the noodles and spread out evenly.
Add another layer of lasagna noodle and spread the cottage cheese evenly across. Use about ¼ the parmesan to layer in here as well. Sprinkle any leftover parsley to add some extra flavor!
Lastly, layer in the last level of lasagna noodles. Drizzle the marinera sauce on top to coat the noodles.
Top with mozzarella and the other ¼ cup of parmesan. Feel free to add more parsley onto this layer as well.
Cover with foil and bake for 30 minutes.
At 30 minutes, take of foil layer and cook for an additional 10-15 minutes to help crisp up the cheese on top.
