20-Minute Tomato Soup
INGREDIENTS
1 Tbsp Olive Oil
1/2 yellow onion, sliced
1 Tbsp minced garlic
3 cups bone broth
1 28 ounce can tomatoes, whole
1 Tbsp Italian Seasoning
S + P to taste
TOPPING:
Parsley, everything seasoning, basil, heavy whipping cream, cheese crumbles - all great options!
Preparation
Heat the oil in a large pot on medium-high heat. Once hated, add the onion slices. Saute for about 5 minutes, until starting to brown. Then add in the garlic, cook for another 1-2 minutes stirring occasionally.
Next, add in the bone broth, tomatoes and Italian seasonings. Cook until the soup reaches a simmer. Then reduce the heat to low-medium. Cover with a lid, and let cook for 5-10 minutes.
Then uncover the soup, blend together. You can use an immersion blender or dump into a big blender to mix together.
Pour into serving bowls, and eat up!
Tips
Add heavy whipping cream to thicken it up and make it creamier!
