Breakfast Burritos
Ingredients
1 pack Siete Burrito Tortillas
1 lb Breakfast Chicken Sausage
8 eggs
1 bell pepper, diced
½ yellow onion, diced
2-3 cups spring mix
3 slices goat cheese
1 Tbsp cooking oil
Preparation
1. Warm cooking oil in a skillet on low-medium heat. Add in onions and cook until fragrant, around 5 min.
2. Add in breakfast chicken sausage and bell pepper. Cook the chicken fully.
3. Drain any excess chicken grease/fat before adding in the eggs.
4. Whisk the eggs, and pour them into the pan with the chicken, bell pepper, and onion. Season to your liking, I used everything but the bagel seasoning.
5. Continue to stir around the mixture until its fully cooked, eggs don’t take long!
6. Place aside once finished. Warm up the tortillas for a minute or two. This makes them easier to roll up.
7. Slice the cheese in half so you have 6 half slices.
8. Place a tortilla down, and layer in the ingredients. I’d recommend starting with the slice of cheese, then the scramble, and lastly a handful (1/2 cup) greens.
9. Roll up, tucking in the sides as best you can. Warm a skillet up to medium heat. Place the “end flap” of the rolled tortilla down first. This will help it from rolling open when it comes time to eat it! Cook each side until they start to lightly brown. Set aside.
10. Store in an airtight container or bag in the fridge for up to 5 days. You can also store in the freezer and reheat when you want it.
Tips
All ingredients can be modified to your desired choices. Example; if you don’t like goat cheese use your favorite cheese instead, or if you want to use flour tortillas, feel free to swap that out too. Enjoy!
