Egg Bake

Ingredients

  • 1 dozen eggs (12)

  • 1 Tbsp grass-fed butter

  • 2-3 handfuls of spinach

  • 1 whole yellow onion, diced

  • 6+ slices of uncured bacon, chopped

  • 2 cups shredded sharp cheddar cheese

  • 1 red bell pepper

  • S + P to taste


Preparation

1.    Preheat oven to 350 degrees Fahrenheit. Grease 9x13 glass baking dish with butter or spray. Dice up the onion and sauté in a pan (I use a cast iron skillet) with the butter.

2.    Chop the spinach, set aside for now. Once the onions have started to brown, add in the spinach. Stir around for a minute or two, it won’t take long for the spinach to cook up. Place in a bowl to the side.

3.    In the same pan toss in the bacon chunks. Cook for a few minutes until starting to brown, but not all the way cooked.

4.    In a large mixing bowl whip together eggs, cheese, salt + pepper, and the onion/spinach mix.

5.    Dice up the bell pepper and add in.

6.    Pour all the ingredients into the baking dish. Top with bacon chunks.

7.    Cook for 30 minutes in the oven.


Tips

  • Cut up into serving sizes and store in containers for quick, easy breakfasts throughout the week.

  • You could also freeze servings to use at a later time.

  • Here it’s shown with a side of chia pudding toast.
