Grilled Chicken Drumsticks

Ingredients

  • 1-2 lbs free-range chicken drumsticks

  • 2 bags cauliflower gnocchi from Trader Joe’s

  • 1 bushel asparagus

  • 1 red bell pepper

  • 21 seasoning - Trader Joe’s

  • Buffalo Sauce - optional (I used Noble Made)

  • 1 container Trader Joe’s Vegan Kale, Cashew + Basil Pesto


Preparation

  1. Season the chicken Drumsticks to your liking, I used 21 Seasoning (pictured above).

  2. Cook the chicken on the grill on medium heat, rotating every so often to ensure even cooking. Once done, put to the side and drizzle Buffalo sauce on top - optional.

  3. While the chicken is on the grill, prepare your vegetables but chopping them as desired. I usually cut the ends off the asparagus and cut the bell pepper into slices. Drizzle a bit of avocado oil in the pan (enough to cover the bottom), add veggies and sauté until slightly browned or cooked through.

  4. The cauliflower gnocchi is frozen and there are two ways I’ve prepared it. 1- toss directly into the air fryer and cook at 390F until done, usually no more than 10 minutes (or until it starts to get mushy). 2- sauté on the stovetop with a bit of oil or butter or ghee, stirring occasionally and cooking until right before it gets mushy

    1. . I find the air fryer is a bit faster as well as more consistent.

  5. Once the cauliflower gnocchi is cooked, take a spoonful of pesto and mix together. Usually about half the container for 2 bags of gnocchi.

  6. Serve desired portions + enjoy!
