Protein Banana Nut Muffins
Ingredients
1 box Simple Mills banana bread + muffin mix
2 servings collagen peptides
½ cup Enjoy life - dark chocolate chips
½ cup chopped walnuts or pecans
2 tbsp chia seeds
2 tbsp ground flax seeds
Preparation
Preheat oven to 350 ℉.
Prepare banana bread mix according to directions on the box
Add in collagen when you mix the eggs, water, and oil - mix well together so it’s dispersed evenly, then add in bread mix.
Add in chia + flax seeds, mix well.
Add in chocolate chips.
Line muffin tin with paper liners or spray bottom + edges well
Pour batter evenly into muffin tin, filling about ⅔ the way.
Sprinkle nut pieces on top of each muffin + extra chocolate chips if desired!
Cook 25-30 minutes or until toothpick up comes out clean
Transfer muffins to cooling rack to cool before serving
