Protein Banana Nut Muffins

Ingredients

  • 1 box Simple Mills banana bread + muffin mix

  • 2 servings collagen peptides

  • ½ cup Enjoy life - dark chocolate chips

  • ½ cup chopped walnuts or pecans

  • 2 tbsp chia seeds

  • 2 tbsp ground flax seeds


Preparation

  1. Preheat oven to 350 ℉.

  2. Prepare banana bread mix according to directions on the box

  3. Add in collagen when you mix the eggs, water, and oil - mix well together so it’s dispersed evenly, then add in bread mix.

  4. Add in chia + flax seeds, mix well.

  5. Add in chocolate chips.

  6. Line muffin tin with paper liners or spray bottom + edges well

  7. Pour batter evenly into muffin tin, filling about ⅔ the way.

  8. Sprinkle nut pieces on top of each muffin + extra chocolate chips if desired!

  9. Cook 25-30 minutes or until toothpick up comes out clean

  10. Transfer muffins to cooling rack to cool before serving


Tips

Your nut + chocolate chip choice can be altered to your liking.
