Quinoa Salad
Ready in 20 minutes
Serves 6 people
Ingredients
1 cup quinoa - cooked
¼ cup extra virgin olive oil
2 limes - juiced
½ lime zested
1 tsp pink himalayan salt
2 tsp ground cumin
½ tsp red pepper flakes
1½ cherry tomatoes - cut in quarters
1 tbsp parsley
½ cup red onion - chopped
Preparation
Cook quinoa and let cool.
In a small bowl, whisk together olive oil, lime juice, lime zest, pink salt, cumin, and red pepper flakes.
In a separate bowl, mix quinoa, cherry tomatoes, parsley, and onion.
Pour dressing over quinoa mixture. Add salt + pepper to taste.
Enjoy!
Tips
Let sit together for an hour in the fridge before serving.
