Quinoa Salad

Ready in 20 minutes

Serves 6 people

Ingredients

  • 1 cup quinoa - cooked

  • ¼ cup extra virgin olive oil

  • 2 limes - juiced

  • ½ lime zested

  • 1 tsp pink himalayan salt

  • 2 tsp ground cumin

  • ½ tsp red pepper flakes

  • 1½ cherry tomatoes - cut in quarters

  • 1 tbsp parsley

  • ½ cup red onion - chopped


Preparation

  1. Cook quinoa and let cool.

  2. In a small bowl, whisk together olive oil, lime juice, lime zest,  pink salt, cumin, and red pepper flakes.

  3. In a separate bowl, mix quinoa, cherry tomatoes, parsley, and onion.

  4. Pour dressing over quinoa mixture. Add salt + pepper to taste.

  5. Enjoy!


Tips

Let sit together for an hour in the fridge before serving.
