Tuna Egg Salad

Ingredients

  • 2 cans wild caught tuna (wild planet is a great brand)

  • 2 Hard Boiled Eggs

  • 4 tbsp avocado mayo (Chosen Foods)

  • 2 tbsp dijon mustard

  • 1/2 cup cucumber, chopped

  • 1/2 cup red bell pepper, chopped

  • 1 tsp dill seasoning

  • 1 tsp red chili flakes

  • s+p to taste

  • goat cheese crumbles (optional)

    • Sides:

      • carrots

      • cucumber

      • red bell pepper

      • mini pita rounds

      • OR bread for a sandwich


Preparation

  1. For starters, you’ll need Hard Boiled Eggs. I did this using my air fryer. Place 1-6 eggs in the basket of the air fryer, cook at 300 F for 15 minutes. Once done, take the basket out and run all the eggs under cold water for a few minutes, peel immediately.

    1. I use a Ninja Foodi air fryer. I recommend checking into different temperatures for different air fryers.

  2. While those are cooking, put together the rest of the ingredients. Open the tuna cans, mix in a bowl to break up.

  3. Chop up bell peppers and cucumbers, mix into bowl.

  4. Add dijon mustard and mayo to combine all ingredients. Season with salt + pepper to your liking. Add dill seasoning and chili flakes.

  5. Once the eggs are done and peeled, use an egg cutter or a knife to chop. Add into bowl and mix everything together.

  6. Topped with goat cheese crumbles

  7. Serve however you enjoy, store the rest in an air tight container in the fridge - good for a few days.


Tips

Tuna egg salad can be eating in a variety of ways. This time I served it with mini pita rounds and a side of vegetables. I also made it into a sandwich for my husband using a slice of goat cheese instead of crumbles.
