Chicken + Dumplings with Cauliflower Gnocchi
Ingredients
1.5-2 lbs chicken (breast or thighs)
2 tbsp ghee
2 tbsp avocado oil
¼ tsp pink salt
3 cloves garlic - diced
½ onion - diced
4 sticks celery
¾ cup frozen organic vegetable mix - got mine from Costco
Corn, green beans, peas, carrots
pack cauliflower gnocchi (Trader Joe’s)
1 container chicken broth
Spices : turmeric, parsley, bay leaf, thyme, oregano, rosemary
Preparation
1. Boil chicken + shred up. Put to side.
2. In a separate pot (big enough for all the soup) add ghee, avocado oil, and pink salt.
3. Once hot, add in diced garlic, celery, onion, and vegetables of choice. Let simmer together for about 8 minutes, stirring occasionally.
4. In a pan, sautee the cauliflower gnocci (frozen) with ghee until lightly browned. Put to the side temporarily.
5. Add the broth into the pot of vegetables. Let cook together for about 10 minutes. Sprinkle tumeric, parsley, bay leaf, thyme, oregano, and rosemary on top.
6. Add shredded chicken + gnocci into pot. Let all flavors simmer together for 5 minutes.
7. Enjoy!
Tips
You could choose to cook the chicken in the broth, which would change the cooking time. I already had shredded chicken prepped and ready to go, which is why the recipe states adding it in at the end so it doesn’t get too dry.
