Chia Pudding Toast

Ingredients

  • 3-4 tbsp or 1/4 cup chia pudding

  • 1 slice sourdough bread

  • 1-2 tbsp almond butter

  • handful blueberries (topping)

  • 2-3 tbsp walnuts (topping)

  • drizzle honey


Preparation

  1. To start, be sure your chia pudding has been made already. Recipe can be found here, or simply put it is 1/4 cup chia seeds and 1 can coconut milk - let sit for at least 2 hours or overnight.

  2. Toast up the bread. Spread almond butter on toast. Add chia pudding evenly to toast. Top with blueberries, walnuts, drizzle honey, and any other toppings you wish.

  3. Enjoy!


Tips

Another great topping would be a sprinkle of hemp seeds for an added protein bonus!
