Ground Beef + Sweet Potato Tots with Salad

Ingredients

  • 2 lbs grass-fed ground beef

  • 1 bag Cruciferous Crunch salad (found at Trader Joe’s + Costco)

  • 4 sweet potatoes (large)

  • Taco seasoning (I used a homemade mix)

SEASONING for Sweet Potatoes:

  • Chili powder

  • Garlic powder

  • S + P

  • Cumin

  • Paprika

  • Light avocado oil drizzle to coat

DRESSING (my go-to for salads):

  • 1/3 cup Olive Oil

  • 1 Tbsp apple cider vinegar

  • 1 Tbsp dijon mustard

  • 1 Tbsp minced garlic (or 1 clove garlic)

  • S + P to taste


Preparation

  1. Since the sweet potatoes take the longest, I would start there. Skin them, and cut into cubes no bigger than 1 inch, or it will take too long to cook. Toss in a bowl and season with seasonings listed above. Cook these in an air fryer at 400 F for 20-30 minutes, tossing every 7-10 min for even cooking.

    1. If you don’t have an air fryer, toss onto a sheet pan and cook in the oven at 400F for 30-40 minutes, flipping halfway through for even cooking.

  2. On the stove top in a skillet, add the ground beef. Sprinkle 2 Tbsp taco seasoning and mix up. Stir every few minutes and break up chunks to cook evenly. Once finished, strain and set aside.

  3. For the salad, which is basically pre-prepped, open the bag and pour into a bowl. Mix the dressing ingredients in a separate bowl, and drizzle onto the salad, toss to coat.

  4. Dish up desired servings. I topped this dish with beet kraut, for probiotic benefits and a tangy addition to the meal.


Tips

  • Beet kraut found at most grocery stores.

  • Could also top with avocado.
