Healthy Baked Ziti

Ingredients

  • 1 lb sausage (pork,turkey,chicken)

  • 1 lb ground beef

  • 1 bell pepper, diced

  • 3 carrot sticks, diced

  • 1 medium zucchini, diced

  • 2 cups goat cheese, shredded

  • 1 box brown rice pasta (used Jovial)

  • 1 jar marinera sauce (use Rao’s)


Preparation

  1. In a skillet, cook up the ground beef and sausage. Once done, transfer into a bowl with paper towels to soak up any leftover grease. Set aside.

  2. While the meat is cooking, bring pasta to a boil. Cook until al dente – slightly firm to the bite still. It will continue to cook while in the oven.

  3. Heat oven to 350 F.

  4. While the meat and pasta are cooking, start dicing up the vegetables; carrots, bell pepper, and zucchini.

  5. In a 9x13 baking dish, start layering in the ingredients. Add in the vegetables, meat, and pasta. Stir around to evenly distribute. Pour over the marinara sauce and mix up.

  6. Add in 1 cup goat cheese shreds and toss around. Once everything is evenly mixed up, add the last cup of goat cheese on top.

  7. Cover and cook for 35 minutes. Then take off the cover and cook for an additional 10 minutes, or until cheese starts to brown.

  8. Enjoy!


Tips

Vegetable + cheese choices can be adjusted to your personal preferences. Great for family dinner or serving a group of people!
